Boozy Chocolate Covered Strawberries

Valentine’s Day is just 2 days away, so I’m sharing 2 boujee boozy twists on a favorite indulgence! Nothing says, “I love you,” more than Chocolate Covered Strawberries, add a little tequila or vodka for this adult version! I made these babies yesterday to share with friends and they were all gone! All you need are strawberries, chocolate, and booze to make my Margarita Strawberries and Caramel Boozy Berries! Happy Valentine’s Day to my boo, friends, family, and galentine’s! <3

Boozy Chocolate Covered Strawberries

A boozy twist on chocolate covered strawberries, Margarita Strawberries and Caramel Boozy Berries.
Ingredients
  • 2 lbs strawberries
  • 1 cup caramel vodka
  • 1 cup tequila blanco
  • 16 oz semi sweet chocolate chips
  • ½ cup coconut oil
  • Toppings: crushed pecans, walnuts, oreos, Hershey's Kisses, sea salt, contrasting chocolate.
Instructions
  1. Wash strawberries and set aside, leave stem on.
  2. With a toothpick, poke several holes on one side of the strawberry only. Repeat until all strawberries have holes.
  3. Divide strawberries evenly, and place in small Tupperware.
  4. Add vodka in one bowl, add tequila in the other, cover with lids and refrigerate for 2 hours.
  5. Fill small pot half way with water and bring to a soft boil.
  6. Using oven safe bowl, mix chocolate chips and coconut oil, place directly over small pot.
  7. Whisk slowly and often until chocolate is smooth.
  8. Dip each individual strawberry into the warm chocolate, and let rest on a baking sheet with parchment paper. Repeat until all strawberries are covered.
  9. Add toppings and chill in fridge for 1-2 hours, or until chocolate is completely cooled.

I wouldn’t recommend soaking the strawberries overnight because they’ll end up soggy. Let them marinate in the alcohol for a minimum of 2 hours, not more than 4, plus the holes help them soak up the liquid faster. Only make the holes on their top side, so the alcohol doesn’t just go through, you want the strawberries to absorb the flavors.

Important! Make sure you use a bowl that has a larger circumference than the pot you’re using, you want the bowl to sit comfortably over the pot, without it falling in. You’ll be working with boiling water and don’t want to burn yourself, use an oven mitten or small towel to hold the bowl while you’re mixing the chocolate. Also, mix slowly but often, so the chocolate doesn’t scorch. If the chocolate is too thick, add more oil by the tablespoon and mix until you get the desired consistency. I prefer this method versus placing the chocolate in the microwave, I always end up scorching it, and this way helps keep the chocolate warm while you dip all the strawberries.

For the toppings I reserved the sea salt specifically for the margarita strawberries, get it? Just like a strawberry margarita with salt on the rim!! The other toppings are just chopped chocolate candies and pecans that I had in the pantry. I added a small dash of sea salt to the caramel boozy berries because I personally love the combination of dark chocolate with sea salt. Use what you have, the trick to making the strawberries look pretty is to add contrasting colors that way they really pop! And as far as placement of the toppings, the best way I can describe it is to throw them at the strawberries!
