Baked Veggie Medley
I made this for my friend’s potluck dinner a couple weeks ago and not only was it delicious, it was incredibly easy! I used only what I had on hand and it made a pretty good batch, big enough to share amongst 6 people. I made it again this week for my meal prep and actually took photos along the way! Try it for you next meal prep!
- 1.5 lbs petite sweet potatoes
- 12 oz bag frozen riced cauliflower
- ½ can black beans drained
- ½ can sweet corn drained
- ½ container zucchini spirals
- 10 oz can petite diced tomatoes drained
- 1 tsp fajita seasoning
- 1 tsp olive oil
- Preheat oven to 350 degrees Fahrenheit.
- In a large casserole lightly spray with nonstick cooking spray.
- Add bag of cauliflower rice and break apart any remaining frozen chunks with a wooden spoon.
- Layer tomatoes, corn, beans, and zucchini spirals, spreading evenly. Add fajita seasoning, and drizzle with olive oil. Cover with foil and bake.
- On a separate microwave safe dish, steam cook sweet potatoes for 10 minutes in the microwave. Serve alongside baked veggies.
- Cover and refrigerate leftovers once completely cooled down.

I found this frozen pack of riced cauliflower at my local HEB, although I’ve easily found them at most grocery stores. Sometimes it’s just easier to buy the cauliflower ready-to-go than to have to chop and process the cauliflower on your own, and for less than $3, I was sold on convenience!
I purchased this bag of organic baby sweet potatoes and steam cooked them in my microwave. I’m a huge fan of plain, steamed sweet potatoes and these were perfect! Definitely recommend if you’re short on time, just follow directions on the bag.
