Beef Fried Cauliflower “Rice”
This was my first time trying frozen cauliflower rice and my only regret is that I didn’t try it sooner! You can make the cauliflower “rice” from scratch, but if you only have 15 minutes to make dinner, the frozen one is a blessing! This also makes an excellent guilt-free meal prep dish! Cut the carbs and enjoy all the goodness!

Quick one pan beef cauliflower fried "rice."
Ingredients
- ½ lb lean ground beef
- 12 oz frozen cauliflower rice
- 1 tsp olive oil
- 1 cup frozen broccoli
- ½ cup purple cabbage chopped
- 5 sprigs cilantro
- ¼ small onion chopped
- 1 tsp onion powder
- 1 tsp freshly ground black pepper
- 1 tsp Himalayan pink salt
- 2 tsp sriracha
- 1 large egg
Instructions
- Bring large pan to medium high heat, add olive oil.
- Add ground beef and break apart using wooden spoon, season with onion powder, salt, and pepper.
- Add onions and stir until softened, then add broccoli and cabbage.
- Add package of cauliflower rice and break apart.
- Make room in center of pan and add egg, lower heat, stir until cooked through.
- Garnish with cilantro and sriracha.

I used lean ground beef because that’s what I had on hand, modify the recipe to your protein of choice, use ground chicken, ground turkey, tofu, or go meatless! Whatever you use, just make sure to break it down into small bits, as pictured below.
