Buffalo Turkey Meatballs
If those teaser photos made your mouth water then you’re in the right place! I love the taste of buffalo, well anything spicy really, but there’s just something special about buffalo sauce covered foods dipped in ranch! My Buffalo Turkey Meatballs are a tasty alternative to traditional wings or beef meatballs, because they’re made with turkey! In all honesty, as I was eating them I thought I was eating chicken, so deliciously confusing to my taste buds! Try this lighter version at your Super Bowl party, or as a new dinner option! If ranch isn’t your thing you can always substitute it for blue cheese, I’m happy with either!
- 1 lb ground turkey
- ¾ cup Panko crumbs
- 1 large egg
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp pepper
- ½ tsp salt
- 1 tsp coconut oil
- ¾ cup buffalo sauce
- 3 green onions thinly sliced
- Place ground turkey into medium mixing bowl.
- Add Panko, egg, onion powder, garlic powder, pepper, salt, and green onions into bowl.
- Cover with cling wrap and put in fridge for 30 minutes.
- Remove bowl from fridge, make small meatballs using meatball scoop or clean hands.
- Bring skillet to medium high heat, add coconut oil, and brown meatballs.
- Place meatballs in slow cooker, add buffalo sauce, and cook on low for 2 hours.
- Garnish with green onions, and serve with ranch or blue cheese for dipping.

You can make these ahead and simply heat and serve on game day. They’re also super convenient to grab and go, and did I mention how filling they are? I had these for lunch today and I’m still full! These were mild enough to make my nose run, but not too spicy that I had to chug a glass of water. Let me know what you think!
