Cilantro Lime Chicken Salad
There are a few food staples that I always have on hand in my house: tequila, chicken, avocados, canned corn, limes, and tomatoes. This Cilantro Lime Chicken Salad incorporates all of them for an easy weekday dinner, or a light lunch if you divide and toss it into meal prep containers. The dressing is full of flavor and has the right amount of tang and spice! Spruce up your next salad, and save some dinero! A salad this pretty easily runs around $10 not including the fresh avocado! - 1 lb chicken breasts
- 1 can corn strained
- 1 can black beans strained
- 4 oz kale
- 4 oz spinach
- 1 cup cherry tomatoes
- ¼ small red onion chopped
- 1 avocado
- DRESSING
- 5 limes
- 5 sprigs cilantro finely chopped
- 4 tbs olive oil
- 3 tbs water
- 1 tbs onion powder
- 1 tsp red pepper flakes
- 1 tsp salt
- 1 tsp freshly ground pepper
- Make the dressing by squeezing the juice from the limes in a small bowl, add cilantro and muddle. Add olive oil, water, onion powder, red pepper flakes, salt, and pepper in the same bowl.
- Use half of the dressing to marinate the chicken for half an hour. Simply toss in a leak proof plastic bag and refrigerate.
- Reserve the other half of the dressing for the salad.
- Grill chicken and chop into bite sized pieces. Chicken is fully cooked at 165 degrees Fahrenheit.
- In a large salad bowl, add corn, beans, kale, spinach, tomatoes, and onions. Serve with warm chicken and freshly sliced avocados. Add dressing to your liking.

Don’t forget to massage the kale prior to chopping! It’s naturally tough and giving it a nice rub makes it more pleasant to your palate. (Yes, I’m serious, get all up in there and massage it using clean hands!) I love how the dressing pools in the avocado! We had this for dinner and as you can see from the photo, we almost ate it all, it’s a huge salad!
