Coconut Lime Margaritas
I recently had my first EVER coconut lime margarita, and it was life changing!! I mean, I’ve been squeezing limes over freshly chopped coconut bits since I was a lil niña, but for some reason never put them in a drink! The flavors take me back to a tropical vacation on a sizzling day in Mexico, so I’m officially proclaiming this summer, the summer of Coconut Lime Margaritas!
- 1.5 oz tequila blanco
- 1.5 oz cream of coconut
- 1 oz coconut water
- ⅛ tsp agave syrup
- Juice of 1 freshly squeezed lime
- Zest of 1 lime
- Optional: coconut flakes and limes for garnishing
- Using a small grater, grate the lime prior to slicing in half and set aside.
- Fill tall glass or cocktail shaker with ice.
- Add tequila, cream of coconut, coconut water, agave syrup, and juice of one lime. Add a pinch of lime zest. Shake vigorously until ingredients are mixed together.
- Serve over plenty of ice and garnish with fresh coconut flakes and a lime.
- Enjoy on a hot summer day!

I am so extra sometimes, so I actually toasted my coconut flakes over the stove top! Just add a tsp of coconut oil into a pan and stir the coconut flakes around until they turn a light brown. It adds 5 minutes to the recipe, but definitely worth it!
