Cod Fillets with Zucchini Spirals
Cod is often overlooked at the seafood department but I make sure to show it some love, especially when it’s on sale at my local grocery store. Cod is a mild flavored, low fat, and white flaky fish. Cod provides a good amount of vitamin B which helps keep your hair and skin healthy, and also helps regulate your metabolism. It cooks extremely fast making it an easy weeknight meal! Eat them alongside some vegetables, like I did, or toss everything in a tortilla for Taco Tuesday! Don’t forget all that garlic lemony sauce left in the pan! Drizzle over the cod and veggie spirals!
- 1 lb fresh Atlantic Cod
- 1 container Veggie Co. Zucchini Spirals
- 2 lemons
- 4 cloves minced garlic
- ½ red pepper
- 1 tsp sea salt
- 1 tsp freshly ground pepper
- 1 tsp coconut oil
- 3 sprigs cilantro
- Bring large pan to medium high heat, saute zucchini spirals.
- Remove from pan and set aside, add coconut oil and chopped bell pepper, saute until softened.
- Season cod with salt and pepper, add to pan.
- Add lemon slices and squeeze juice to desired taste.
- Cook and cover for 10 minutes flipping once halfway.
- Garnish with cilantro and serve over zucchini spirals.

If you’ve never had veggie noodles before, please go buy some on your next grocery trip! I’ve seen these Veggie Noodle Co. in four varieties, zucchini, sweet potato, butternut squash, and even beets! My fave so far is the zucchini, add lemon or a red sauce and although it’s simple, it’s absolutely delicious! You can easily make 3 meals out of one container, and you can enjoy the spirals raw, or saute them! I normally use them as an alternative to pasta, and can’t wait to try them in other dishes!
