Cozy Cowboy Chili

Can you believe this soup has 32 beans and 8 vegetables?!? Yeah me either! I found this in the bulk section at Whole Foods and I’m so glad I stumbled upon it, look at how pretty it is! And it’s just under $7/lb! It’s literally freezing in Houston, so I must have a steaming hot bowl of soup to defrost myself! Cute name courtesy of my fiancé, he sat down and proclaimed it Cowboy Chili.

Easy slow cooker, cozy cowboy chili.
Ingredients
  • 2 cups (measured the dry ingredients) 32 bean and 8 vegetable soup
  • 1 medium sweet potato chopped into chunky pieces
  • 1 qt (32 oz) vegetable broth
  • 4 cups water
  • 2 tsp salt
  • 2 tsp pepper
  • 4 tsp quick chili powder
  • 3 tsp hot sauce
  • 1 package Beyond Meat meatless crumbles
  • 1 can kidney beans
  • Cheddar cheese for topping
Instructions
  1. Peel and chop the sweet potato into large chunks.
  2. Add all ingredients into slow cooker (except the canned kidney beans). Slow cook for 5 hours.
  3. During last hour of cook time add drained kidney beans into slow cooker.
  4. Serve piping hot with corn bread or any other bread of your choice.

This recipe is technically vegan, (trust me no one will notice lol) until I added shredded cheddar cheese on top! It tastes amazing without it but totally your call! Also, I eye balled the amount of chili powder I used, so keep shaking away until you get the desired flavor, if you use turkey or beef it’ll help add flavor. Stay warm y’all!
