Remove skin off salmon and cut into 1-2 inch squares.
Chop vegetables into thick, large pieces.
Place salmon and vegetables on wooden skewers, alternating between the salmon and vegetables.
Season with lemon pepper and a fajita seasoning.
Bring cast iron skillet to high heat and 1 tsp coconut oil.
Using tongs, carefully arrange skewers on grill, and sear for 2 minutes on each side. Lower heat and continue to flip until salmon is just cooked through.
Remove cast iron grill from heat and let rest for 5 minutes.
Squeeze juice of one lime and serve.
