Season chicken breasts with salt and pepper and place on a clean plate.
On a separate plate spread Panko crumbs evenly.
Crack egg over chicken breasts, coating both sides.
Press one side of chicken breasts firmly onto plate with Panko crumbs.
Bring skillet to medium heat, add coconut oil.
Quickly place breaded side down and sear for 3 minutes, flip and sear non breaded side for 3-4 minutes.
Move chicken onto oven safe dish and bake for 25 minutes. Chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit.
Once chicken is done, let it rest for 5 minutes, then chop into bite size chunks.
Bring a clean skillet to medium heat, add zucchini spirals, red pepper flakes, apple cider vinegar, and honey. Toss until spirals absorb most of the liquid, about 5 minutes.
Garnish with chopped green onions and sriracha.
