- 1 lb chicken breasts
- 1 tsp coconut oil
- 1 cup chicken stock
- 1 package HEB Green Curry Cooking Sauce
- 3 oz cherry tomatoes
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp sea salt
- ½ tsp freshly ground black pepper
- ½ container Veggie Noodle Co. Butternut Spirals
- 2 oz baby spinach
- 1 tbs shredded Grana Padano cheese
- 4 sprigs cilantro
- Preheat oven to 350 degrees Fahrenheit.
- Bring large cast iron skillet to high heat, add coconut oil.
- Season chicken breasts with onion powder, garlic powder, sea salt, and pepper.
- Sear chicken on grill on all four sides, approximately 2 minutes on each side.
- Add chicken stock, green curry, and cherry tomatoes.
- Place cast iron grill in oven and bake for 20 minutes.
- Remove grill from oven and place chicken on clean cutting board.
- Meanwhile add spinach and butternut spirals in the same hot grill and slowly stir, letting the vegetables absorb all the juices.
- Place chicken back on grill and garnish with cilantro and cheese.
- Bake for additional 5 minutes. Let chicken rest for 5 minutes prior to slicing.
