Green Curry Chicken

Cast iron grilled green chicken curry.
Ingredients
  • 1 lb chicken breasts
  • 1 tsp coconut oil
  • 1 cup chicken stock
  • 1 package HEB Green Curry Cooking Sauce
  • 3 oz cherry tomatoes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp freshly ground black pepper
  • ½ container Veggie Noodle Co. Butternut Spirals
  • 2 oz baby spinach
  • 1 tbs shredded Grana Padano cheese
  • 4 sprigs cilantro
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Bring large cast iron skillet to high heat, add coconut oil.
  3. Season chicken breasts with onion powder, garlic powder, sea salt, and pepper.
  4. Sear chicken on grill on all four sides, approximately 2 minutes on each side.
  5. Add chicken stock, green curry, and cherry tomatoes.
  6. Place cast iron grill in oven and bake for 20 minutes.
  7. Remove grill from oven and place chicken on clean cutting board.
  8. Meanwhile add spinach and butternut spirals in the same hot grill and slowly stir, letting the vegetables absorb all the juices.
  9. Place chicken back on grill and garnish with cilantro and cheese.
  10. Bake for additional 5 minutes. Let chicken rest for 5 minutes prior to slicing.
