Easy One Bowl Healthy Banana Bread
Ingredients
2 or 3 ripe bananas
2 eggs
1¾ cups whole wheat flour
⅓ cup melted coconut oil
½ cup maple syrup or honey
¼ cup milk of your choice or water
1 tsp vanilla extract
1 tsp baking soda
½ tsp cinnamon
Pinch of salt
Extra add ons: chopped pecans, raisins, chocolate chips, dried fruit etc.
Instructions
Preheat oven to 325 degrees Fahrenheit.
Place parchment paper in a 9x5 loaf pan.
In a large mixing bowl, mash bananas together.
Add oil, maple syrup, milk, eggs, and whisk.
Stir in the vanilla extract, baking soda, cinnamon, and a pinch of salt.
Mix in flour, small banana chunks are ok.
Pour the batter into the loaf pan, sprinkle with cinnamon on top and optional toppings.
Bake for 1 hour, or until toothpick inserted in the center comes out clean.
Let cool for at least 10 minutes before slicing.
