Tofu Fried Rice

Vegan, spicy tofu fried rice.
Ingredients
  • 1 (14 oz) package extra firm tofu
  • 1.5 cups long-grain brown rice, rinsed
  • 2 cups frozen vegetable medley (corn, peas, carrots, green beans)
  • 4 cloves garlic minced
  • 2 tsp red chili sauce
  • 2 tbsp. soy sauce
  • 1 tbsp. tahini or peanut butter
  • 2 tsp maple syrup or organic brown sugar
  • 1 cup chopped green onions
Instructions
  1. Preheat oven to 400 degree Fahrenheit and line a baking sheet with parchment paper.
  2. Remove tofu from packaging and wrap in a dry paper towel. Set something heavy over the tofu, to remove excess liquid. (I used a cast iron skillet.)
  3. After 5 minutes, remove paper towel and chop tofu into bite sized pieces. Arrange evenly on baking sheet and bake for 30 minutes. Tofu is done when edges are golden brown and firm to the touch. If you prefer softer tofu, reduce bake time by 5 minutes.
  4. While tofu is baking cook rice over stove top or in rice cooker.
  5. In a medium bowl, add garlic, red chili sauce, soy sauce, tahini/peanut butter, and maple syrup/organic brown sugar. Toss the cooked tofu in sauce and let marinate for 5 minutes.
  6. Heat a large wok or cast iron skillet on medium heat. Add the frozen vegetables and cook until softened. Scoop the tofu into the same pan stirring until golden brown.
  7. Add cooked rice and stir together until hot.
  8. Serve with additional soy sauce and garnish with green onions.
