Sopa de Fideo - Mexican Noodle Soup

Mexican sopa de fideo, or Mexican noodle soup.
Ingredients
  • 1 small potato skin off and cubed into small pieces,
  • 1 (8 oz) package Banza angel hair pasta
  • 1 (8 oz) package traditional ground seitan
  • 1 tomato bouillon cube
  • 2 tablespoons vegetable oil
  • 1 (16oz) package vegetable broth
  • 1 small onion finely chopped
  • 4 cups water
  • 1 can diced tomatoes
  • 1 tsp cumin
  • ½ tsp sea salt
  • 1 tsp freshly ground pepper
  • 1 tsp chili powder
  • 4 limes
  • cilantro and Cholula hot sauce for garnishing
Instructions
  1. Bring a large pot of salted water to a boil, and boil pasta for 4 minutes. Rinse with cool water, and using kitchen shears cut noodles in half or smaller.
  2. In a separate pan, add vegetable oil, onions, and potatoes, stir until potatoes are just golden brown but not fully cooked through.
  3. Add vegetable broth, tomatoes, water, and tomato bouillon cube. Cover and bring to a rolling boil. Add seitan and using a large wooden spoon, break apart until you have small pieces resembling ground beef. Season with cumin, sea salt, freshly ground black pepper, and chili powder. Lower heat to a simmer and cover.
  4. Once potatoes are softened (a fork should easily poke through) add the cooked noodles.
  5. Cover and turn off burner. Let the soup rest for a couple minutes prior to serving.
  6. Garnish with cilantro and don't forget to add a squeeze of lime! I also added a dash of Cholula because I enjoy the extra spice!
