Mini Chicken Fajita Tacos
Ingredients
  • 3 lbs fajita seasoned boneless chicken thighs
  • ½ chopped white onion
  • 1 tsp olive oil
  • 1.5 tsp pepper corns
  • mini corn tortillas
  • 8 sprigs cilantro
  • 2 limes
  • fresh salsa
Instructions
  1. Bring skillet to medium high heat, add olive oil and brown chopped onion.
  2. Place chicken in same skillet and brown all over.
  3. Move onions and chicken into slow cooker.
  4. Add pepper corns.
  5. Cook on high for 3 hours or on low for 5.
  6. Carefully shred chicken with two forks.
  7. Serve with tortillas, add salsa, fresh onions and cilantro.
