Spicy Shrimp Tacos

- SHRIMP TACOS
- 1 lb shrimp
- 1 tsp coconut oil
- ½ tsp fajita seasoning
- ½ tsp garlic powder
- ½ tsp pepper
- ½ tsp cumin
- 6 corn tortillas
- ½ cup chopped cabbage
- ¼ cup chopped purple onion
- ½ cup cilantro
- ½ red bell pepper
- ½ jalapeño deseeded
- 6 cherry tomatoes
- 1 tsp fresh salsa
- CURRY SAUCE
- 2 tsp sour cream
- 2 tsp plain greek yogurt
- 1 tsp curry powder
- Peel and clean shrimp, wash with cold water before and after removing shell, set aside.
- Bring skillet to medium high heat, add 1 tsp coconut oil.
- Season shrimp with fajita seasoning, garlic powder, pepper, and cumin.
- Arrange shrimp on skillet and grill for 4 minutes on each side prior to flipping.
- While shrimp cooks, wash all vegetables, and chop into bite sized pieces.
- Remove skillet from heat and let shrimp rest for 5 minutes prior to serving.
- Warm up tortillas on a separate skillet and place in tortilla warmer.
- Assemble shrimp tacos and add toppings (cabbage, purple onion, cilantro, red bell pepper, jalapeño, tomatoes, and salsa) to your liking.
- To make the sauce, mix yogurt, sour cream, and curry powder into a small dish.
- Drizzle sauce over tacos and enjoy.
