Slow Cooker Lamb Stew

Slow cooker lamb stew with couscous.
Ingredients
  • 1 lb cubed lamb
  • ½ white onion
  • 3 garlic cloves minced
  • 1 tbs cumin
  • 1 tbs sea salt
  • 1 tbs black peppercorns
  • 1 can diced tomatoes
  • 1 can garbanzo beans
  • 1 cup beef broth
  • 8 oz fresh mint
  • 4 oz fresh basil
  • 1 lime
  • 2 cups cooked couscous
Instructions
  1. Chop onions into large slices, mince fresh garlic cloves
  2. Bring pan to medium high heat and brown onions and garlic.
  3. Add lamb, season with cumin, salt, and pepper, and stir until browned.
  4. Carefully place onions, garlic, and lamb into slow cooker.
  5. Add tomatoes and 1 sprig fresh basil and 1 sprig mint (stems on).
  6. Add garbanzo beans and beef broth.
  7. Slow cook on low for 3 hours.
  8. Remove basil and mint.
  9. Serve alongside couscous and garnish with freshly chopped mint.
