Grilled Chicken Fajitas
Chicken fajitas are my weakness, I just can’t say no! Living in Texas has spoiled me, I have easy access to fajitas on every corner. Literally, there’s a famous Mexican restaurant next door to my place, and they have the best fajitas in town! Happy Texas Independence Day y’all!! I made these Grilled Chicken Fajitas for National Margarita Day, and safe to say I indulged on this holiday, I just love food themed Holidays!

Cast iron grilled chicken fajitas
Ingredients
- 2 lbs chicken fajita
- 1 red pepper
- ½ small white onion
- 1 tbs coconut oil
- flour tortillas
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Wash and chop bell pepper and onion into large pieces.
- Bring cast iron grill to high heat, add coconut oil.
- Sear chicken fajitas on both sides.
- Add bell pepper and onions.
- Place in oven and bake for 15-20 minutes. Chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit.
- Remove from oven and let rest for 10 minutes.
- Slice and serve with tortillas.

I chop the vegetables into large slices, they’ll shrink while they cook, and I like to keep my meat to vegetable ratio pretty even. Serve with tortillas and alongside some guacamole and sour cream, my favorite combo!
