Grilled Salmon Skewers
Did the photo above fool you?? It sure does look like chicken! Well great news, it’s just as easy to grill salmon as it is to grill chicken. If you’re looking for a lighter version or are looking to switch up the usual, try my Grilled Salmon Skewers! Thick cuts of organic wild caught salmon are perfect for this, they won’t fall apart while you grill them, and they even get a nice little char.

Grilled lemon pepper salmon skewers
Ingredients
- 1 lb salmon thick cut
- ⅓ purple onion
- ½ green pepper
- ½ yellow pepper
- ½ red pepper
- 1 tsp coconut oil
- ½ tsp lemon pepper seasoning
- ½ tsp fajita seasoning
Instructions
- Remove skin off salmon and cut into 1-2 inch squares.
- Chop vegetables into thick, large pieces.
- Place salmon and vegetables on wooden skewers, alternating between the salmon and vegetables.
- Season with lemon pepper and a fajita seasoning.
- Bring cast iron skillet to high heat and 1 tsp coconut oil.
- Using tongs, carefully arrange skewers on grill, and sear for 2 minutes on each side. Lower heat and continue to flip until salmon is just cooked through.
- Remove cast iron grill from heat and let rest for 5 minutes.
- Squeeze juice of one lime and serve.

Pro Tip: When selecting your fresh salmon at the seafood department, ask the butcher to remove the skin off the salmon!
