Juicy Slow Cooker Steak Tacos
Sundays are for sports, brunch, and lazy dinners. I normally spend my Sundays finishing up chores and preparing for the busy workweek ahead. The last thing I want to worry about is what’s for dinner, so this series will be centered around slow cooker meals for that special day of the week! Most recipes will require at least 4 hours of cook time, so be prepared to prep in the early afternoon, and enjoy in the evening.
My first recipe for Slow Cooker Sundays is Juicy Slow Cooker Steak Tacos, I made these over the weekend and they were a big hit at my party! Literally, not a single bite was left! The prep is quick and is sure to be a crowd pleaser!
- 3lbs boneless steak
- 1 green pepper
- 1 yellow pepper
- 1 red pepper
- 1 white or yellow onion
- 1 tsp sea salt
- 1 tsp black peppercorns
- 1 tsp fajita seasoning
- 3 tsp olive oil for marinade
- ½ tsp olive oil to the side
- Marinate steaks with olive oil, sea salt, black peppercorns, and fajita seasoning for at least 30 minutes to overnight.
- Chop onion and three peppers into slices.
- Bring pan to medium high heat, add ½ tsp of olive oil, and brown onions.
- Once caramelized, place onions at the bottom of the slow cooker.
- Arrange steaks side by side inside slow cooker.
- Place sliced peppers on top of steak.
- Slow cook for 4 hours on high or 6 hours on low.
- When fully cooked, shred steak with two forks, meat should easily fall apart on its own.
- Serve with tortillas of your choice and top off with cheese and guacamole!

This was my first time preparing cuts of steak this way, and I was surprised with how juicy the meat turned out! It melts in your mouth, and I honestly could’ve eaten the meat straight out of the slow cooker, it was that good! The meat is tender and so flavorful that the tortillas and additional toppings are not necessary, but a big plus! However, I’m in Texas so who could ever pass up a scoop of fresh guacamole?!
