Mini Chicken Fajita Tacos

I love all things miniature, miniature makeup samples, miniature desserts, miniature dogs, the list goes on! We’ll focus on miniature tacos for today, because everyone loves tacos. I grew up frequenting food trucks way before they were a “thing,” and it’s something I still look forward to today. Traditionally, these are made with pork (al pastor) or beef (carne de res), but we’ll go with a lighter version and make them with chicken. These Chicken Fajita Tacos are so easy to make, just grab your slow cooker and let it do all the work for you. I make these for every single event at my house, such as girls’ wine nights, birthdays, and even holidays, and I never have leftovers! My friends always ask for the recipe, so here it is, the secret’s out! And it’s super simple, the hardest part is deciding what toppings you want!

Mini Chicken Fajita Tacos
Ingredients
  • 3 lbs fajita seasoned boneless chicken thighs
  • ½ chopped white onion
  • 1 tsp olive oil
  • 1.5 tsp pepper corns
  • mini corn tortillas
  • 8 sprigs cilantro
  • 2 limes
  • fresh salsa
Instructions
  1. Bring skillet to medium high heat, add olive oil and brown chopped onion.
  2. Place chicken in same skillet and brown all over.
  3. Move onions and chicken into slow cooker.
  4. Add pepper corns.
  5. Cook on high for 3 hours or on low for 5.
  6. Carefully shred chicken with two forks.
  7. Serve with tortillas, add salsa, fresh onions and cilantro.

For this recipe, I always go for the thighs versus the breast, in my opinion it has more flavor and I eat enough chicken breast throughout the week. For the toppings, you can get as wild as you’d like here. Some of my faves are shredded Mexican style cheese, queso fresco, salsa, cilantro, freshly diced onions, avocado, pickled jalapenos, and even a drizzle of queso. I usually have a few mini tacos, and then end up eating the chicken with a fork and some toppings, it’s that juicy! This shredded chicken also goes well in queso dips, or burrito bowls, by all means get creative with it! Make these for your Super Bowl party, you get such a bang for your buck! I usually pay under $5 for the chicken, and that’s the most expensive part of the recipe!
