Pan Seared Lamb Chops
Lamb always sounds so fancy and complicated but these Pan Seared Garlic and Mint Lamb Chops only look fancy, they’re a treat for an easy weeknight meal or weekend delight! They cook fast, so don’t take your eyes off of them! I personally enjoy them medium rare, cook for a couple more minutes for medium, if you overcook them they’ll be tough, and nobody wants dry meat!

Easy, pan seared garlic and mint lamb chops.
Ingredients
- 6 lamb chops
- 1 tsp olive oil
- 4 sprigs finely chopped fresh mint
- 3 cloves minced garlic
- ½ tsp sea salt
- ½ tsp freshly ground pepper
Instructions
- Season lamb chops with sea salt.
- Chop fresh garlic and mince, set aside.
- Bring large skillet to medium high heat, add olive oil.
- Sear lamb chops for 2-3 minutes on each side, season with pepper.
- Add garlic and toast until just browned.
- Remove skillet from heat, cover pan and let rest for 5 minutes.
- While lamb cools, chop fresh mint and squeeze lime juice to create a thick paste.
- Top lamb chops with fresh mint paste and serve warm!
