Pineapple Cucumber Agua Fresca
Nothing like an ice cold glass of agua fresca to take me back to childhood summers in Mexico and vacations on the beach! An agua fresca means fresh water, they’re traditionally made in giant gallon sized pitchers and sold by the cup at fruit stands, Mexican restaurants, and even trendy juice bars! It’s not quite summer yet, but the weather has been hot and cold all week long! My Pineapple Cucumber Fresh Fruit Agua Fresca is made with all natural ingredients, none of that powdered stuff you find at supermarkets! The agave nectar is optional, skip it for a sugar free option! Pro tip: The longer it sits in the fridge the better it tastes! Make it a day ahead and the difference is worth waiting for!

In addition to the blended pineapple I add as many pineapple chunks into the pitcher as can possibly fit. FYI I never use the entire pineapple, I end up with about 1/3 in a Tupperware container and save it for later. I wouldn’t recommend blending the cucumbers, they’re already mostly made up of water, and blending them creates an odd foam. Don’t forget to use some of the fruit to garnish the drinks!
