Skillet Ground Turkey & Sweet Potatoes
I love sweet potatoes!! My favorite way to enjoy them is steamed with absolutely nothing else on them, not even a dash of salt. This isn’t for everyone, so I had to think of a creative way to make my favorite carb! Sweet potatoes are high in fiber (especially if you eat them with the skin on) and are mostly made up of complex carbohydrates AKA starches. Sweet potatoes are an easy swap for regular potatoes, and they’re healthier too! One sweet potato provides four times the required daily intake of Vitamin A, which is imperative for eye health! They provide more Vitamin C and fiber, and have fewer calories and carbs.
Lean ground turkey can be pretty plain, so adding sweet potatoes is a perfect way to dress it up and get a few meals out of it! Although the turkey is the protein for this meal, the soft caramelized sweet potatoes are the star of this dish! Try it for your next meal prep and let me know what you think!
- 1 lb lean ground turkey
- ¼ chopped white onion
- 2 sprigs green onions
- 1 chopped yellow pepper
- 1 tsp coconut oil
- 1 cup organic beef broth
- 1 tsp sea salt
- 1 tsp freshly ground pepper
- 1 tsp garlic powder
- ½ cup shredded Italian cheese
- Preheat oven to 350 degrees Fahrenheit.
- Bring cast iron skillet to medium high heat, add coconut oil.
- Add ground turkey and break apart with wooden spoon. Season with sea salt, pepper, and garlic powder.
- Add sweet potatoes, let them brown for a few minutes.
- Add onions and yellow peppers.
- Stir until all vegetables are softened.
- Add beef broth and place in oven, bake for 15 minutes or until sweet potatoes are soft when pierced with a fork.
- Add cheese, place skillet back in oven until melted.
- Garnish with green onions.
