Slow Cooker Cilantro Lime Carne Asada

I found this marinated gem at Whole Foods, and I’ll be honest I was skeptical because I normally buy my carne asada at a Mexican meat market. But, the price was right, and I am obsessed with cilantro lime anything, so I decided to give it a shot! Santo Dios AKA OMG!!! It was such a tender and moist cut of meat! I shredded it and then made carne asada tacos!

Slow cooker cilantro lime carne asada.
Ingredients
  • 3lbs carne asada, marinated cilantro lime
  • 1 yellow pepper
  • ½ white onion
  • 1 tsp coconut oil
Instructions
  1. Let meat rest on counter until at room temperature.
  2. Meanwhile chop onion and bell pepper into large chunks. Bring skillet to medium high heat, add coconut oil, brown the vegetables.
  3. Add the vegetables into the slow cooker and add the carne asada.
  4. Slow cook on low for 6 hours or on high for 4 hours.
  5. Carefully shred carne asada using tongs, meat should practically fall apart on its own.
  6. Serve hot. Refrigerate leftovers once completely cooled down.

The best part is that the meat creates so much juicy goodness, so save it for when you need to reheat it! Simply add into a large oven safe casserole and cover with foil, reheat at 350 degrees Fahrenheit for roughly 25 minutes.
