Slow Cooker Lamb Stew
I first had lamb enjoying birria as a child (Mexican lamb stew), but we only served it during special occasions, so it wasn’t very often. Then I had it at an all-you-can-eat Brazilian style steakhouse and that’s when I really appreciated the tenderness of a medium rare piece of lamb. This was while I was in college, so I feel like I’ve missed out on so many delicious recipes growing up! I’ve certainly made up for all of that lost time by teaching myself how to cook such a delicate piece of meat since then! My Slow Cooker Lamb Stew is a great way to start integrating lamb into your diet if you’ve never tried it before! It’s flavorful, and the lamb isn’t too overwhelming since there are many familiar ingredients that make up this dish. Simply toss it in the slow cooker and enjoy this exotic looking meal for dinner, the lamb will just melt in your mouth!
- 1 lb cubed lamb
- ½ white onion
- 3 garlic cloves minced
- 1 tbs cumin
- 1 tbs sea salt
- 1 tbs black peppercorns
- 1 can diced tomatoes
- 1 can garbanzo beans
- 1 cup beef broth
- 8 oz fresh mint
- 4 oz fresh basil
- 1 lime
- 2 cups cooked couscous
- Chop onions into large slices, mince fresh garlic cloves
- Bring pan to medium high heat and brown onions and garlic.
- Add lamb, season with cumin, salt, and pepper, and stir until browned.
- Carefully place onions, garlic, and lamb into slow cooker.
- Add tomatoes and 1 sprig fresh basil and 1 sprig mint (stems on).
- Add garbanzo beans and beef broth.
- Slow cook on low for 3 hours.
- Remove basil and mint.
- Serve alongside couscous and garnish with freshly chopped mint.

Prior to serving, chop up all the fresh mint that you have on hand, add a squeeze of lime juice, and garnish the dish heavily! I love fresh mint, and it’s a perfect match for lamb.
