Spicy Shrimp Tacos

You know what day it is, Taco Tuesday! Everyone’s favorite day of the week! I’m not picky when it comes to tacos, as long as they don’t come in a crunchy shell, I’ll eat them all! I normally choose between chicken or beef, but since it’s early on in the week I need a protein that cooks quickly and tastes just as good. My go to is shrimp, you can cook it in 10 minutes and have homemade tacos in just minutes! Spice up your Tuesday and try my Spicy Shrimp Tacos!

Quick spicy shrimp tacos
Ingredients
  • SHRIMP TACOS
  • 1 lb shrimp
  • 1 tsp coconut oil
  • ½ tsp fajita seasoning
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ½ tsp cumin
  • 6 corn tortillas
  • ½ cup chopped cabbage
  • ¼ cup chopped purple onion
  • ½ cup cilantro
  • ½ red bell pepper
  • ½ jalapeño deseeded
  • 6 cherry tomatoes
  • 1 tsp fresh salsa
  • CURRY SAUCE
  • 2 tsp sour cream
  • 2 tsp plain greek yogurt
  • 1 tsp curry powder
Instructions
  1. Peel and clean shrimp, wash with cold water before and after removing shell, set aside.
  2. Bring skillet to medium high heat, add 1 tsp coconut oil.
  3. Season shrimp with fajita seasoning, garlic powder, pepper, and cumin.
  4. Arrange shrimp on skillet and grill for 4 minutes on each side prior to flipping.
  5. While shrimp cooks, wash all vegetables, and chop into bite sized pieces.
  6. Remove skillet from heat and let shrimp rest for 5 minutes prior to serving.
  7. Warm up tortillas on a separate skillet and place in tortilla warmer.
  8. Assemble shrimp tacos and add toppings (cabbage, purple onion, cilantro, red bell pepper, jalapeño, tomatoes, and salsa) to your liking.
  9. To make the sauce, mix yogurt, sour cream, and curry powder into a small dish.
  10. Drizzle sauce over tacos and enjoy.

For fresh jalapeños, I remove the seeds and the veins which brings the heat factor way down. If spicy isn’t your thing, these are just as good without the jalapeño or salsa. The cabbage not only adds a beautiful pop of color, but gives a nice crunch to the soft taco. Let’s not forget the curry sauce, you’ll feel like a taco master in seconds!
