Spiralized Beets
Happy #MeatlessMonday! Hope you guys had a fabulous Easter filled with family, food, cascarones, and more food! I made these simple and quick meals using the same container of spiralized beets from Veggie Noodle Co. I have tried all their other veggie varieties, except for the beets, and I finally found them at HEB! This one has the most potent flavor of all, so I recommend stirring them in with other foods, especially if you’re not a huge fan of beets! I love the extra crunch and bright red color, such a nice touch for spring!
- ½ container Veggie Noodle Co. Spiralized Beets
- 1 tsp honey
- 1 tsp sriracha
- 1 tsp sesame seeds
- 1 tsp garlic powder
- 1 tsp sea salt
- 1 tsp coconut oil
- Bring skillet to medium heat and add coconut oil.
- Add beets into the skillet and stir, add the honey, sriracha, sesame seeds, garlic powder, and sea salt, as you toss the veggie spirals.
- Stir for 5 minutes or until desired softness.
- Garnish with finely chopped basil and enjoy!

I had raw sushi grade tuna over the beets, so lot’s of bright red colors going on here! Add your own twist to this #simplebuttwisted recipe and let me know what you come up with! Beets are a challenge to mix into a meal, but these spiralized ones make it so easy! How do you eat beets?
For the guacamole recipe, I used my original recipe for Mexican Guacamole only I substituted the purple onion for beets! It sounds crazy, but the beets add a nice texture to the guacamole, which I have so lovingly named guacabeets! Side note: A little goes a long way, add the chopped beets in by the teaspoon, if you add too much then it really alters the flavor of the avocado. It’s a healthy substitution, so it’s all good in my cocina!
