Sweet & Spicy Chicken Zoodles
Every now and then I like to jazz up my chicken by lightly breading it. I’m all for flexible dieting and putting healthy twists on everyday dishes, so here’s a little hack for preparing your next breaded dish – only bread one side! This literally takes zero additional seconds and it’s a healthier alternative to breaded frozen chicken packs. My Sweet and Spicy Chicken Zoodles dish is a simple swap for your next homemade meal!
- ½ container Veggie Noodle Co. Zucchini Spirals
- 1 lb chicken breasts
- ½ cup plain Panko crumbs
- ½ tsp corn starch
- 1 egg
- 1 tsp coconut oil
- ½ tsp freshly ground pepper
- ½ tsp Himalayan pink salt
- ½ tsp crushed red pepper flakes
- ¼ cup apple cider vinegar
- 1 tsp honey
- 1 tbs sriracha
- 3 sprigs green onions
- Preheat oven to 350 degrees Fahrenheit.
- Season chicken breasts with salt and pepper and place on a clean plate.
- On a separate plate spread Panko crumbs evenly.
- Crack egg over chicken breasts, coating both sides.
- Press one side of chicken breasts firmly onto plate with Panko crumbs.
- Bring skillet to medium heat, add coconut oil.
- Quickly place breaded side down and sear for 3 minutes, flip and sear non breaded side for 3-4 minutes.
- Move chicken onto oven safe dish and bake for 25 minutes. Chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit.
- Once chicken is done, let it rest for 5 minutes, then chop into bite size chunks.
- Bring a clean skillet to medium heat, add zucchini spirals, red pepper flakes, apple cider vinegar, and honey. Toss until spirals absorb most of the liquid, about 5 minutes.
- Garnish with chopped green onions and sriracha.

I picked up this Guava Jam while I was vacationing in the Bahamas a couple weeks ago, it’s delicious on its own or over toast, I chose to get a little crazy and add it into my meal. This is completely optional, but if you have some fruity jam, add in just enough to complement the heat from the Sriracha. In my opinion it brings the dish together and gives it some true Caribbean vibes. As the saying goes, it’s better in the Bahamas!
