Turmeric Farro Soup

Turmeric has been used in India for hundreds of generations for its spice and natural healing power. The main active ingredient in Turmeric is called curcumin, which has powerful anti-inflammatory effects. My Turmeric Farro Soup also has kale and turkey, so your body will be full of delicious superfoods. Farro is an ancient grain, and although it was my first time making it, I fell in love with its grainy texture and taste. I noticed that as its cooking, it froths a lot more than quinoa or rice, nonetheless, it was super simple to make! This is the quick version of this recipe, if you have the time, I recommend throwing all the ingredients in your slow cooker and cooking on high for 4 hours (minus the kale), letting the flavors infuse all day!

Turmeric farro soup with turkey and kale.
Ingredients
  • 1 lb turkey breasts
  • 16 oz vegetable broth
  • 1 can great northern beans
  • 2 tsp coconut oil
  • 1.5 tsp sea salt
  • 1.5 tsp cumin
  • 1.5 tsp freshly ground black pepper
  • 1 tbs turmeric
  • 6 oz kale chopped
  • 2 cups farro cooked
  • 1 yellow bell pepper chopped
  • ½ small yellow onion chopped
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Rinse and dry farro, place in a medium pot and add enough water to cover.
  3. Salt the water and bring to a boil, then cover and simmer for 25 minutes, drain and set aside.
  4. Meanwhile, bring cast iron skillet to high heat, add 1 tsp coconut oil.
  5. Season turkey breasts with ½ tsp salt and ½ tsp pepper. Sear for 3-4 minutes on each side.
  6. Place cast iron skillet in oven and bake for 15 minutes.
  7. Remove skillet from heat, and let rest for 5 minutes before slicing turkey.
  8. Bring large pot to medium high heat, add 1 tsp coconut oil.
  9. Add bell peppers and onions, season with salt, pepper, turmeric, and cumin. Stir often until vegetables soften.
  10. Add vegetable broth, beans, and farro and bring to a soft boil.
  11. Add sliced turkey breasts, then cover and simmer in large pot for 30 minutes.
  12. Toss in chopped kale during last 10 minutes of cook time.
  13. Serve alongside pita bread or pita chips.
