Vegan Lentil Soup
Is it just me or was it reeeeally hard to #springforward today? We were in Austin this weekend and you know how traveling makes the days fly by! I enjoy starting off my week with #meatlessmonday! My recipe link for Vegan Lentil Soup is pretty simple, and the recipe was inspired by all the vegetables I had in my fridge. I only buy fresh produce and some weeks we use a litte every day, other weeks I buy too much and we end up with a lot of veggies. But have no fear, I will not let it go to waste, as you can tell by my selection of ingredients for this soup. All you need is a slow cooker, green lentils, and the vegetables can be pretty flexible. Enjoy!
- 1 lb dry green lentils, rinsed and drained
- 1 quart vegetable broth
- 1 quart water
- 1 tsp olive oil
- 6 cloves minced garlic
- 1 cup diced white onion
- 2 tomatoes, chopped into thick chunks
- 1 russet potato, peeled and chopped into large pieces
- 3 stalks of celery
- 2 tbsp cumin
- 2 tbsp curry powder
- 4 tbsp hot sauce
- salt and pepper to taste
- ¼ cup baby kale
- Chop celery into 1 inch half moons, cut peeled potato into 2 inch pieces, and tomatoes can be rough chopped into thick chunks. Carefully dice white onion and set veggies aside.
- Mince fresh garlic and also set aside.
- Rinse lentils and drain, remove any hard pieces and discard.
- Add olive oil, chopped vegetables, lentils, water, and vegetable broth into slow cooker. Season with cumin, curry powder, hot sauce, and salt and pepper.
- Make sure water just covers all the ingredients, place the top on the slow cooker and cook on low for 4 hours stirring midway if you can.
- Enjoy hot and add a handful of baby kale to each bowl when serving. It'll wilt with the heat naturally.
- Wait for leftovers to cool prior to refrigerating.

If you notice that the water level gets a little low, feel free to add in a litte water one cup at a time. You may have to add extra seasoning if you dillute it too much though, so slowly add it in. I ended up going back and dumping more Cholula hot sauce to give it a nice spicy flavor!
