Vegan Tacos

Happy #TacoTuesday! So it’s been a little over a week since I began my journey into becoming a plant-based human, yay! I feel lighter and have more energy, and I do find myself eating more! So good news so far! And if you know me, there’s no way  I could possibly give up tacos! (Which was silly of me to think in the first place!) I’m more focused on what I have to gain than on what I have to give up. The hardest part so far, is figuring out the vegan swaps; I grew up eating pork, chicken, beef, etc. so it was second nature to go to the grocery store and pick up my meats from the organic section. My Vegan Tacos have so much flavor and honestly, you can’t even tell the difference in my photos! These could be made with pork for all you know, but I assure you I used a plant based filler to make my yummy tacos.

So in case you’re wondering, “How can I make my tacos vegan?”

Swap animal protein (chicken, pork, beef) for a plant based alternative, such as mushrooms, extra peppers and onions, or avocado. I used Frieda’s Meatless Taco Filling!

Swap dairy aka cheese for a non dairy version. Contrary to popular belief, converting a typical recipe to vegan requires very minimal effort!

Quick and easy, flavorful vegan tacos.
Ingredients
  • 1 package Frieda's soy taco filling
  • 1 red bell pepper, chopped lengthwise.
  • ½ cup chopped white onion
  • 12 small corn tortillas
  • ¼ cup vegan pepperjack cheese
Instructions
  1. Bring nonstick skillet to medium high heat and brown onions, once softened lower heat to medium.
  2. Add soy taco filling and red peppers to pan, break taco filling apart using a wooden spoon, simmer for 5 minutes.
  3. I prefer my peppers on the crunchy side, if you like it more softened add the peppers along with the onions.
  4. Warm up tortillas on a separate skillet by lightly brushing them with canola oil and a tiny splash of water. Heat them up until light brown toasted spots appear. Add 1 heaping tbsp of the veggie/soy taco filling in each tortilla, you should have enough for 12 tacos. Arrange and serve immediately.
  5. Add additional toppings such as salsa, lettuce, chopped tomatoes, non dairy cheese, and avocado as desired.
