White Wine Chicken & Chickpea Rotini

Ok y’all, I’ve found the Holy Grail of pasta! I discovered Banza pasta at my local grocery store and their bright packaging instantly caught my attention! This pasta is made with chickpeas and has twice the protein, four times the fiber, and nearly half the net carbs versus the average pasta! It has a doughier taste and texture, but I personally love it!

I cooked the chicken breasts in the white wine, which gave them an incredibly fragrant smell and such an aromatic taste! I also made the white wine sauce using the same wine! So much wine, and so much good!! I received this wine as a part of my monthly Winc membership, it’s literally a membership exclusively for people who love wine (so literally every woman over the age of 21). Every bottle of wine comes with a recipe card and this one suggested I pair it with chicken!

One pan white wine chicken with chickpea pasta.
Ingredients
  • 8 cups water
  • 1 box Banza Rotini
  • 1 lb chicken breast
  • 1 tsp Himalayan pink salt
  • 1 tsp freshly ground pepper
  • 1 tsp onion powder
  • 2 tbs olive oil
  • 1 tbs coconut oil
  • 1 cup white wine
  • 8 cherry tomatoes
  • ½ cup shredded Parmesan cheese
  • ½ cup heavy whipping cream
  • 3 sprigs fresh basil
Instructions
  1. In a large pot, bring 8 cups of salted water to a boil, cook Banza Rotini according to package.
  2. Bring large pan to medium high heat, add coconut oil.
  3. Season chicken breasts with salt, pepper, and onion powder.
  4. Add to pan and sear on each side for 3-4 minutes.
  5. Add half cup of wine and lower heat to a simmer.
  6. Cover pan with lid and cook chicken for 10 minutes, chicken is fully cooked at 165 degrees Fahrenheit.
  7. Remove chicken from pan and let rest on clean cutting board.
  8. In the same pan, add remaining wine, heavy whipping cream, tomatoes, Parmesan, and olive oil.
  9. Stir and bring to a soft simmer, add cooked rotini and cover for 5 minutes.
  10. Remove pan from heat, add sliced chicken into pan and cover until warm.
  11. Garnish with fresh basil and Parmesan and serve.

While the chicken is resting, use all the same juices and crusty bits left in the pan for the sauce, it’ll infuse it with all the delicious flavors from the chicken and residual wine. Look at how juicy that steamed chicken turned out, you can literally smell the aroma from the wine on the chicken. Make the Banza pasta according to the package and have it ready to the add in with the sauce.
